Dairy-Free Cinnamon Latte

Do you ever really want a latte, but you’re just too lazy to find your car keys and drive to a coffee shop? (and you’re trying to avoid spending $5 on a drink?)

Me. All the time.

Luckily I found this really cool way to make a latte at home and all you need is a blender!

This recipe is creamy, frothy, flavorful, and oh so perfect. I might even say that it is better than a coffee shop latte, AND its better for you!

There is some research out there that has determined cinnamon might have the ability to decrease inflammation, lower blood pressure, and fight acne (source). Honey also has some interesting health benefits (read about them here). I don’t know if these ingredients are actually doing anything for my body, but I can tell you they taste pretty dang good together, so I am going to keep on drinking them. 

I make this latte with coconut milk because I like the sweetness it adds. You can use whatever milk you prefer (cow, almond, soy, ect.) Lately I have been having adverse reactions to dairy. (for example, yesterday I ate a bowl of macaroni and cheese for lunch and within a few hours I was super bloated and I had such awful cramps I told my grandma that I was dying. Thankfully, I didn’t die and these symptoms went away with a little bit of time.). So milk alternatives it is! Another perk to making this latte at home is that you don’t have to pay extra for requesting it be made with coconut milk (I just hate that!).

And the coconut oil. You may think “I can just skip that part,” but you can’t. The coconut oil is what creates the deliciously creamy texture. It thickens it up like a really good hot coco. Honestly, it doesn’t add much for flavor. So if you’re not a coconut fan, don’t worry, you won’t be tasting it. If you’re like me and really do like coconut, use coconut milk and garnish the cup with some shredded coconut. Mmmmm.

Cinnamon Coconut Latte

A warm, creamy latte that tastes like it came straight from your favorite coffee shop.

Makes About 2

Ingredients

  • 2 tbsp coconut oil
  • 1/3 c coconut milk or preferred milk substitute
  • 12 oz brewed coffee or whatever amount your keurig brews
  • 1/4 tsp cinnamon
  • a squeeze of honey
  • a drop of vanilla extract

Instructions

  1. Brew your coffee. I use my Keurig’s largest setting. You will want at least a cup, but the amount doesn’t really matter.

  2. Place your coconut oil and milk in a bowl and microwave until oil is melted.

  3. Add coffee and milk mixture to blender while still hot. Add in cinnamon, honey, and vanilla extract.

  4. Blend until frothy.

  5. Pour into a cup, top will a little sprinkle of cinnamon, and enjoy!

Recipe Notes

This recipe yields one really big cup, but it doesn’t store well in the fridge due to the coconut oil. For this reason, this recipe is best enjoyed with a friend. Or make yourself a half recipe. Or just drink it all by yourself. I’m not judging.
