National Lemonade Day: Peach Lemonade Recipe

How are you going to celebrate?!?!

I have chosen to celebrate by making up some fresh Peach Lemonade to enjoy on this lovely summer day. Okay, in all honesty, it’s kinda cloudy and dreary out today, but you know what they say:

When life gives you lemons necklace.
“When life gives you lemons, make lemonade.”

You may be thinking “Hannah, summer is almost over. I don’t want to drink lemonade. I am ready to wear sweaters and drink pumpkin spice lattes, and rake leaves.” Oh wait, I’m the only one thinking that? Regardless, peaches are perfect at this point in the summer. So we might as well hold off on the sweaters for a few days and enjoy the deliciousness of a ripe, juicy peach. Considering National Lemonade Day comes this late in the season (don’t you think it should be a July holiday?), I think it is just begging to be celebrated with the peach.

This recipe is easy peasy lemon squeezy. (Honestly the most difficult part of the recipe is squeezing all the lemons, so I don’t quite understand that saying.)

Allow a quarter cup of agave nectar, two sliced peaches, and a cup of water to simmer on the stove top.

While that’s simmering, squeeze all of your lemons. You’re going to want about a cup of lemon juice. It will probably take 6 to 7 lemons to get the right amount.

Remove the peach mixture from the heat. Strain the liquid into your pitcher, discard the peaches (or keep them to eat, or use in a recipe, they’re your peaches, don’t let me tell you what to do with them). Add the lemon juice to your pitcher.

Now all you have to do is add water and ice. The amount of water you add will affect the taste and the number of servings. I added six cups of water and ended up with a nice pitcher full of a refreshing lemonade that wasn’t too overpowering. It was a great complement to homemade pizza on the grill. For a stronger lemonade, simply add less water.

Ingredients

  • 1/4 cup agave nectar
  • 2-3 peaches peeled and quartered
  • 1 cup water
  • 1 cup lemon juice (about 6 to 8 lemons)
  • 6 cups water

Instructions

  1. Add agave, water, and quartered peaches to a pot and place on high heat until boiling. Lower heat to medium and allow the mixture to simmer (approx 15 minutes).

  2. Squeeze lemons until there is one cup of juice.

  3. Remove peach mixture from heat. Strain liquid into pitcher, discard peaches.

  4. Add lemon juice to pitcher.

  5. Fill pitcher with desired amount of water. I suggest six cups. Add ice.

  6. For extra flair, freeze fresh peach slices to use as garnish when serving.

As summer comes to a close it’s fun to think about the little charms it has given us: lazy days at the lake, baseball games, a little bit of traveling, and time to enjoy an ice cold cup of lemonade as we soak in the last few rays of summer sun.
